Ice cream! You scream!

Posted on May 21, 2013 10:57 AM by Meghan

We all scream for ice cream!!

We LOVE it when ice cream season rolls around.  Here in Vermont, we crave green grass, blue skies and the long days of summer.  And of course LCC ice cream!

Not only will our stores be serving up your favorite flavors like classic chocolate, vanilla, chocolate hazelnut, almond butter crunch and more…but keep an eye out for our ice cream cart around town.

If there is a festival or event happening around Burlington, chances are you’ll find us scooping up our small-batch 100% Vermont dairy ice cream.  Burlington Discover Jazz Festival, Summervale, Burlington Food & Wine Festival, and the new South End Truck Stop, right down the street from our chocolate factory, are a few highlights of what’s to come this summer.  Stop by and grab a cone- summer only lasts so long!!

PS- Our Pops will be back again this summer too!!

The Bebop Hop Chocolate Bar!

Posted on May 15, 2013 11:20 AM by Meghan

Chocolate. Beer. Jazz.  What happens when you combine all three?  The Bee-Bop Hop chocolate bar!  To celebrate the 2013 Burlington Discover Jazz Festival,  we joined forces with fellow sponsor Long Trail Brewing Company to create this year’s limited-edition chocolate bar.

Here at LCC, we are continually inspired by the local food and beverage producers in Vermont and are always looking to combine ingredients in new ways to create something truly distinctive.

The Bebop Hop chocolate bar certainly achieves this with a hop-infused, deep malty caramel covered in a silky blend of milk and dark chocolate. Honestly, this is like nothing else you’ve ever tasted before.

LCC’s Research and Development Specialist Lauren Deitsch and Long Trail Brewmaster Dave Hartmann explain the process of using Long Trail’s raw ingredients for making beer to create a finished chocolate confection.

Pouring the malt syrup into the caramel.

“While touring the LCC factory, we observed the caramelizing process,” says Hartmann.  “And I thought it would be interesting to try caramelizing some concentrated malt extract, what we brewers call ‘wort,’ a house-made ingredient used in making our beers.”

Making the caramel.

“By boiling down the malt extract into a syrup, we were able to use this as a sweetener in our caramel,” explains Deitsch. “Add in Cascade hops and the result is a chocolate bar with a heady aroma reminiscent of Long Trail beers.  This was a true collaboration and the end product, with flavor notes of citrus fruit, grassy herbs and malted caramel, balanced with a sweet blend of chocolate, is incomparable.”

“Malt and hops are the basic building blocks of beer,” continues Hartmann. “We concentrated the best part of the malt (the sweet extract) and the best part of the hops (the wonderful aromas) to create an intense burst of malty, hoppy, chocolaty deliciousness.”

The wrapped bar coming off the moulding line.

All profits from the sale of the bar will benefit the FlynnArts “LCC Youth in Jazz Scholarship,” providing performing arts education for young musicians, as well as the FlynnArts Jazz programs.  Priced at $4.00, the Bee-Bop Hop Bar is non-alcoholic and will be available for purchase from May 20 to June 9. It can be found at Lake Champlain Chocolates’ retail locations on Church Street, Pine Street and in Waterbury Center, online at www.lakechamplainchocolates.com and at the Long Trail Visitor Center in Bridgewater Corners, VT.

How to Give a Gift Your Mom Will Love!

Posted on April 15, 2013 12:01 PM by Meghan

Wondering what to get your mom for Mother’s Day?  We have a lot of amazing chocolates from milk to dark, fruity to nutty, spicy to sweet, solid to filled… the list goes on.  So how do you choose the right Mother’s Day chocolates?

Here’s a guide of sorts that might be able to help— we think you’ll find at least some hint of your mom lurking in the personalities below.

Caramel Queen:  She knows what she wants.  And you better not deprive her.  Whether it’s getting her nails done, going to the gym or enjoying a glass of wine, this mom will not let anything- or anyone- get in her way.  Make sure to buy her exactly what she wants- and only that.  No assorted chocolates here.  Strictly milk and dark chocolate caramels.  And don’t expect her to share.

Traditionalist:  A modern day June Cleaver, this mom bakes homemade cookies, volunteers at the school, coaches the soccer team and insists on family dinners.  In sticking with tradition, our gourmet truffles will provide her with plenty of classic flavors to enjoy like Legendary Dark, Milk Hazelnut and White

Iconoclast/Rebel: She picks up her kids wearing sunglasses (no matter the weather) and refuses to engage in gossip with the other moms on the playground.  Somehow she manages to keep up with the latest trends in art, film and music.  And this goes for chocolate too- so give the Revel Chocolates  or the Wild Pepper Madagascar Chocolate Bar so she can maintain her too cool for school status.

She Does it All: Super mom to the max.  Successful career, quality time with her kids, home cooked meals every night- how does she do it?  No one really knows, but you better be sure to say a big thank you come Mother’s Day. The Mother’s Day Chocolate Gift Basket should do the trick.

“Love is All I Need”: Ok, so she’s been known to do a drop-off or two at school in her pajamas and her kids desperately need a haircut, but she’s as happy as can be and so is her family.  Love makes her world go ‘round so why not shower her with some dark chocolate hearts?

Vermonter: Whether she lives in Vermont or just pines for our beautiful state, this mom would never be caught buying anything but pure maple syrup for her kidlet’s pancakes. Fresh, natural and beautiful, this mom embraces the truly good things in life so give her some chocolate that does the same with our Vermont Country Gift Basket or our Chocolates of Vermont.

“Oh, Just Get Me A Little Something”: Always thinking of others and never comfortable with too much attention, this mom is happiest with a homemade or thoughtful card.  But she still deserves something a little extra- special.  Try our assorted Chocolate Flowers or an elegant box of Spring Chocolate Truffles- just enough of a decadent treat without her thinking you “over did it again.”

Super Fresh Chocolates

Posted on April 2, 2013 2:14 PM by Meghan

Over the years we’ve shared our tips on how to store your chocolate so it stays fresh.  You might ask- who stores chocolate?  Isn’t it for eating?  Well, maybe the Easter Bunny went overboard this year, or perhaps you’d like to stock up on your favorites so you always have a Five Star Caramel bar at your fingertips.  Whatever the reason, we’re thrilled to say that Lauren Deitsch, our resident chocolatier, wrote up such great tips on how to keep chocolate fresh that she was a featured blogger on Huffington Post!  Go Lauren!

Check out her super fresh tips here.

That’s One Big Bunny.

Posted on March 26, 2013 12:07 PM by Meghan

We’ve been making what has to be one of the bigger chocolate Easter bunnies in the country (world?) for a long time.  Just take a look at this picture of owner Jim Lampman holding what we endearingly call the Ha Ha Bunny.  It tells us two things:  1. We’ve been making this bunny at least since the early 90s when this picture was taken. 2. He needs two hands to hold the bunny.

It’s big.  Really big.  And kind of heavy.

What does one do with such a big bunny?   Well, this year (like all years) we raffle off a couple of these bunnies to one of our favorite non-profits in the area.  This year we decided to help our friends at the Sarah Holbrook Center.  You may have heard us talk about them before—they’ve been helping families in the Old North End of Burlington for 75 years through social development, education and recreational opportunities.
To enter the raffle, stop by one of our company stores (Pine St or Church St in Burlington and on Route 100 in Waterbury) and buy some tickets to win!  With 23 lbs of chocolate and 2 feet tall, this is all the bunny you’ll need!

Setting the Easter Table

Posted on March 19, 2013 11:29 AM by Meghan

We have everything you need to build an adorable and delicious Easter gift basket.  But you know that already.

Let’s talk about the Easter table.

With spring almost here, it’s time to celebrate color!  Remember green grass and pink flowers?  I know, it’s hard to imagine but it is coming. And even though Easter is early this year and in many parts of the country (like here in Vermont) leaves on the trees and flowers in the garden are still a long way off, Easter is the time to start reminding ourselves that yes, indeed, we will see those wonderful sights again.

The Easter table is the ideal place to showcase all the color that will soon be in our lives again and our collection of Easter chocolate this year really captures the color, magic and whimsy of Easter.

Take our chocolate Easter eggs.  Wrapped in gorgeous Italian foils and filled with delectable flavors like caramel, raspberry, and hazelnut, it would be a shame to hide these eggs.  Scatter around the table or fill a glass bowl, the eggs will look stunning, but fair warning- they may not stick around for long!

Then we have our carrot patch with a Tendersweet milk chocolate orange carrot and a Cosmic dark chocolate purple carrot.  Inspired by the bounty of fresh veggies we enjoy at our local farmer’s market every summer, we created our own veggie patch (of sorts.)  Place a carrot at each table setting for your guests; a sweet treat they can enjoy now or for later.

The place setting chocolate bunnies are always a favorite year after year.  Charming and delicious, they are the perfect-sized treat after a large Easter feast.  Place the bunnies in some green grass to make him feel at home.

If you really want to make a statement, Mr. Goodtime Bunny, named “Best-Dressed Bunny” by Real Simple, will do just that.  Enough for a crowd to share (it’s over 3lbs of chocolate!), Mr. Goodtime brings good cheer in his morning coat and decorative Easter egg,  and will take center stage at your table!

We’re just the chocolate experts, if you’re looking for more table setting ideas and etiquette we’ll leave that to our friends up the street at Emily Post Institute

Hop. Hop.  Easter is almost here!

Did someone say chocolate?

Posted on March 11, 2013 4:08 PM by Meghan

Easter is Sunday March 31.  Yes, that’s right.  Just a little over two weeks away!  That means for those of you in the Burlington area, you’ll start seeing Peter Cottontail outside our store dancing, waving and spreading Easter joy.  And that’s just outside our store.  When you walk into our stores, you’ll be overwhelmed by the chocolate bunnies, carrots, eggs, and Easter baskets you see overflowing the shelves.

Who can resist the Cruisin’ Bunny or a colorful bag full of chocolate-filled Easter eggs like caramel, coconut and raspberry?  Or how about our Tendersweet Milk Chocolate Carrot or the Cosmic Dark Purple Carrot?  Or our new limited-edition organic Easter chocolate bars?

It’s Easter headquarters here at Lake Champlain Chocolates and we’d hate for you to miss out on all the fun!

Give Chocolate Lovers What They Want!

Posted on March 7, 2013 10:47 AM by Meghan

That’s really our whole mission here at Lake Champlain Chocolates: to make chocolate lovers as fanatical about Lake Champlain Chocolates as we are.

Inspired by the tastes and textures our own team members and customers enjoy the most, these new organic chocolate bars will enhance your health with nutritious ingredients and fairly-traded chocolate from the Dominican Republic and Peru, explore new culinary boundaries with four innovative new flavors and indulge your desire for a little reward- either for yourself or as a gift to others.

Here are some of our staff’s new favorites:

Jim Lampman, Founder and President, is an avid skier and snowboarder who satisfies his cravings with the Crunchy Granola bar, milk chocolate packed with toasted oat clusters, raisins and cinnamon.

Eric Lampman, Research and Development Manager, who travels internationally to source new cocoa, is excited about the single origin Peruvian Dark Chocolate bar, which beckons to those curious about emerging terroir.

Allyson Myers, Director of Sales, tucks the new salty-sweet Peanut Butter bar in her bag whether she’s spending the day on the waters of Lake Champlain or enjoying a summer picnic with her family.

Catherine Wisloski, Director of Marketing, rewards herself after an active afternoon with truly indulgent combinations like the Salted Caramel bar, dark chocolate filled with salty-sweet caramel. And when it’s still chilly in Vermont and she dreams of an instant vacation, she breaks into a Creamy Coconut bar for a momentary escape to the tropics.

Packaged in vibrant designs that suggest the intensity of flavor and purity of ingredients, the complete line includes ten chocolate bars and five bite-size squares: Peruvian Dark, Cherries & Chocolate, Dark Chocolate, Milk Chocolate, Sea Salt & Almonds, Spicy Aztec, Crunchy Granola, Salted Caramel, Peanut Butter, and Creamy Coconut.

We hope you enjoy them as much as we do!
