Did someone say chocolate?

Easter is Sunday April 20. And the weather is looking up- maybe we won’t be hiding Easter eggs in the snow after all.  You already know that LCC is where it’s at for all things Easter.  What you might not know is that along with all of our delicious chocolate bunnies, eggs and ready-to-go Easter baskets, we also have a new bunny to add to the pack this year- an Organic Milk Chocolate Sea Salt ‘n’ Almond Bunny and it is A-MAZING. We’re all going nuts (sorry) for it and it takes something special around here to get us talking.  Trust us when we say you need to try this bunny.

Celebrate the Taste of Vermont!

Liquid gold. Sugaring season. Sap is running. Sugar on snow.  

What does this all mean?  It means spring in Vermont.   We don’t really have a traditional spring in Vermont – there are no daffodils blooming-  but we do have sugaring season, those few precious weeks a year when it’s warm during the days (ok, warm means above freezing this time of year) and cold at night to make the sap drip out of maple trees and into a bucket.  It’s this prized sap that is boiled down into maple syrup, cloyingly sweet and impossible to replicate (as much as Aunt Jemima tries).

At Lake Champlain Chocolates we’ve been using pure Vermont maple syrup in our chocolates since the beginning so it’s a wonder it took us 30 years to create the Maple Caramel bar, but alas, it’s here and will not disappoint.  The caramel almost tastes like sampling syrup fresh from the sugar shack, paired with our signature dark chocolate to soften the sweetness and you have a bar that lives up to its name.

If you’re in the area, stop by our Pine Street store this Saturday.  We’re having two free chocolate sensory tastings featuring the new Maple Caramel bar- with the height of sugaring season upon us, the timing couldn’t be better.

"Flowers of Decadence"

Check out this amazing flower and chocolate arrangement!   Rather than us try and do this justice, we asked the florist herself to share her inspriration for this piece of art.  And here it is....

I'm Jamie Wynne Kales of Jamie Wynne Floral, a San Diego floral designer and concept stylist.  I embrace the strength of flowers to enhance a product's presence in the marketplace; in a word, flowers are all about drama and they bring a product to life.  In my work, contrast is a power player, nothing is off limits, details become new fashion. My floral experience is aimed at lifting the senses to a new level, often with my own witty twists on international trends.   So when I proposed a Valentine's floral design workshop for Whole Foods Market La Jolla--titled "Flowers of Decadence", it was my intent to give people an extra-sensory, pampered experience.  I wanted to 'marry' my talents with their great team, using the workshop as a vehicle to highlight Lake Champlain Chocolate.  Whole Foods gave me full artistic license to do this.  

Chocolate blissfully celebrates exquisite taste and texture and the experience of it changes with the addition of certain flavor profiles.  When Lake Champlain graciously offered their intense chocolate 'member'--the Aztec bar--with incredible and hot nuances, I was delighted to run with this.  The immediate finished arrangement presents itself in my mind.  A hand-woven basket to celebrate the artisanal aspect of the product, woven fabric in rich chocolate hues to reflect the growing role of textiles in world floral design, real copper and gold filigree maple leaf embellishments to name its place of origin and praise the ever-changing color palette of this beautiful state.  The hottest of colors introduced to stage the trilogy of the Dark Chocolate Bar (in red), Azteca (orange) and boxed truffles, bright orange 'Babe' spray roses and gorgeous waxflower sing their chorus!  With incredible floral product donated to this endeavor by one of the greatest floral companies run by Jason Levin and his impeccable staff, Dos Gringos in Vista California, I could not go wrong.  Opting for a smaller variety spray rose (from Passion Roses) rather than a standard-sized hybrid tea and keeping the filler monochromatic, the result is the intense partnership of the two set on chocolate-toned railroad ties (also for texture) and chunks of chocolate, set on the ties around it, changing and melting deliciously in the hot Southern California sun.

Petals, Pollen, Panache, and, of course, Chocolate Always!

We couldn't have said it better ourselves.

Because February is the month for love and chocolate, our R & D team was inspired to create a confection that captures this most romantic of months.  

Start with our super smooth milk chocolate ganache found in our luscious truffles, add in some passion fruit concentrate imported from France (another capital of love!) and a smoky sweet aji amarillo chili for some spice and you have a chocolate that delivers on the promise of passion, sweet and spice!

Only available during the month of February, stop into our Pine Street Factory store to pick up these limited edition chocolates.  This could be just the thing you need to complete your Valentine gift!

New Year. New Flavors. New Chocolates.

Our R&D team officially launched the Cocoa Pod Creative today!  What is the Cocoa Pod Creative?  

It’s a way for our amazing team to test new flavors, try different techniques and perfect their culinary skills.  What does this mean for us?  A completely new and delicious chocolate to try each month! 

At the beginning of each month, for the entire year, our team will deliver a new flavor to our Pine Street Factory store, some might be crazy and off the wall and some might be soo delicious they become a regular product that we carry year round.    

Kicking off the year is the Chai Masala.  Our 34% milk chocolate is blended with fresh local cream infused with Vermont Artisan’s Chai Masala, vanilla beans and honey from our own LCC hive creating a smooth and luscious ganache, nestled in a shell of 54% dark chocolate.  The flavor is quite delicate, with the milk chocolate ganache center giving way to subtle hints of the chai.  

Stop in our Pine Street store to try one!  We’re making them in limited quantities, so once they are gone, they are gone.

Stay tuned here as we’ll be announcing a new flavor each month on our blog.   And for those of you too far afield to get to our Pine Street store, you will eventually reap the benefits as our R&D team is sure to come up with some new taste treats we’ll want to share more than just once a year!


A Cider Caramel Celebration!

We are hosting a delicious event this coming Saturday celebrating our collaboration with Citizen Cider and Happy Valley Orchard for the new Apple Cider Caramel—and you are invited!

Come have a taste of these luscious new caramels, it will remind you of biting into an orchard-fresh apple dipped in slow-cooked caramel and then drenched in milk chocolate.  A classic taste of Vermont!

We’ll have tastings of the cider caramels, Citizen Cider’s Unified Press, sweet apple cider for kids, hot mulled cider, our famous caramel apples, Happy Valley Orchard apple syrup and music by none other than the Cider House Boys.  We told you it’s going to be a celebration!

Did someone say free Hot Chocolate Tasting?

Here at Lake Champlain Chocolates, we know how to kick off the holiday season.  You will find no Black Friday craziness here.   In fact, our stores might be the best place to escape all the holiday frenzy.

On Saturday, November 30, from 12-4pm our Pine Street store will be sampling four (yes, four!) different flavors of our delicious hot chocolate.  It’s become something of a tradition on the Saturday after Thanksgiving and it’s the perfect way to kick off the holiday in a civilized and soul-southing way!  Who doesn’t need a little soul-southing this time of year?

We’ll be offering Traditional, Peppermint, Spicy Aztec and Old World for your tasting pleasure.  Come by with your friends and enjoy a sip or two!  Trust us; you’ll be happy you did.  


Move over Martha Stewart. 

Emily McCracken, Lake Champlain Chocolates’ resident artist and chocolate sculptress extraordinaire, will be sharing her talents next Saturday November 16 at 2pm at our Factory Store and Café located at 750 Pine Street.

Emily will show you how to make handcrafted chocolate treats like these pilgrim hats using simple household items.  This is your chance to learn how to dress up your Thanksgiving table and really impress your guests!

This event is free and no registration is required.  We recommend you arrive early as seating is limited.  Sit back and watch how you can expand your dessert repertoire, sculpt with chocolate and create delicious and distinctive Thanksgiving-themed chocolates.

October is the time of year we come together to share the harvest, carve some pumpkins and celebrate CHOCOLATE
