A turkey at Thanksgiving is more than just a tradition, it’s almost mandatory. Fortunately, we’ve expanded your scope of turkeys and their uses by adding our chocolate versions to the mix. We have milk and dark placesetting turkeys as well as a centerpiece turkey, and they all look lovely on a table setting at Thanksgiving, but we’ve also been able to find a few other ways in which you might also try using our chocolate turkeys this Thanksgiving:

Chocolate Turkeys on a Plate

1. Start the meal off with a chocolate turkey: Instead of getting angry at grandpa for “tasting” the mashed potatoes one too many times, give him a chocolate turkey to tie him over. A little chocolate can go a long way to help to warm your palate before the feast!

2. When you bring out the real turkey, give a chocolate turkey to your vegetarian guests. Nobody should be without turkey on Thanksgiving!

3. Make our turkeys your dessert-toppers! What happier place could there be for a few turkeys than on top of a Pumpkin Pie or in the midst of scaling an ice cream mountain?

4. Can’t be with all of your loved ones on Thanksgiving? Let them know you’re thinking of them: send them a turkey in the mail.

5. Hold a Thanksgiving Turkey Coloring Party (with or without children) with Edible Food Coloring Markers.

6. Stage an Epic Battle Between our Centerpiece Turkey and our 2.5 Pound Santa. Get creative. Make a backdrop and film it. Let us know who wins!

7. Have you been invited to a friend's place for your Thanksgiving feast? Don't bring a bottle of wine or a pumpkin pie! Bring a set of chocolate turkeys to your gathering! It's original and you can be sure it will be a crowd pleaser.

8. Hide a few away for stocking stuffers. Yes, our chocolate snowmen are awfully cute, but I’m sure there are a few animal lovers out there who would rather get a turkey! And pure milk chocolate keeps for 16 months (dark chocolate lasts for 20), so no worries on that front!

Whatever you do with our turkeys this Thanksgiving, they are a great tradition to have, and infusing a little Vermont (and Turkey, and Chocolate) charm into your Thanksgiving festivities is sure to be a success!

When you call and order Lake Champlain Chocolates, you typically just speak to those of us in Sales. We take the orders, tell you when they’ll ship, when they’ll arrive and how much it is going to cost. What we don’t tell you is what goes on behind the scenes. You wouldn’t even imagine what goes into getting boxes of gourmet chocolates from the hands of our professional chocolatiers to your doorstep, and as quickly as possible.

While there are dozens of people and several departments for us to thank on a daily basis, this week the wonderful group in Shipping deserved an extra special “Thanks” for their efforts and mad-dashing to get all of our Chocolate Turkeys to your Thanksgiving table on time.

Peanut butter must have been on my brain, because armed with a family-sized jar, I went to work to create a Peanut Butter Chocolate Chip Cookie recipe worthy of our fantastic Shippers. My first try seemed to have worked, because after letting the peanut butter-lover I live with lick the spoon, I had a hard time keeping him away from the kitchen. Here’s what I came up with…

1 cup smooth peanut butter
1 stick unsalted softened butter
¼ cup sugar
¾ cup firmly packed brown sugar
1 egg
1 ½ tbsp vanilla
1 ½ cups flour
½ tsp baking soda
½ tsp baking powder
½ cup of Lake Champlain Chocolates 34% or 54% chocolate chips
Additional white sugar for rolling, optional

Preheat oven to 350º. Line two baking sheets with parchment paper.

With an electric mixer on low speed, cream together butter and peanut butter in a large mixing bowl. Add sugars and blend. Add egg and vanilla and mix until just incorporated.

In a separate small bowl, whisk together flour, baking soda & baking powder. Add to wet mixture and blend well.

Switch to a wooden spoon and fold in your chocolate chips of choice. I used our 54% dark chocolate chips, but either milk, dark or extra dark would be phenomenal.

Roll cookies into small balls and coat in sugar if you choose. Place on parchment-lined baking sheets. Use a fork to create a criss-cross pattern. Bake for 12 minutes, rotating sheets halfway through baking time. Allow to sit on baking sheet for five minutes before transferring to cooling racks.

Yields approximately 40 cookies

Gobble Up Our Chocolate Turkeys

Nothing beats autumn in Vermont. The beautiful fall colors, the snap of cold in the air, and the wonderful fall treats that come with a Thanksgiving dinner. Thanksgiving is one of my favorite holidays because it is one of the few times a year where my enormous extended family crams into one home for a meal befitting a king. I usually am on table décor duty in my family and each year try to find something new to adorn the table. So this year, I’m putting a different spin on things. I figured, what’s a Thanksgiving dinner without something sweet to finish off the feast?
To fit my table favor needs, I looked no further than Lake Champlain Chocolates’ very own Placesetting Chocolate Turkeys – available in both milk and dark chocolate. It’s a perfect finish to a savory Thanksgiving meal; a sweet confection for dessert. I even went with a Centerpiece Chocolate Turkey for the center of the table, guaranteed to please the kid in everyone.
To make the chocolate turkeys, we pour tempered gourmet chocolate into our turkey molds and let them slowly spin in the magnetic tumbler (which uses centrifugal force to create hollow chocolates) .


Each turkey is then popped out of the mold, individually wrapped in a gift bag and tied with a festive orange ribbon.

Since starting at LLC, I’ve realized how much work goes into these delicate treats. Now I find myself looking for excuses to add chocolate to any celebration!
With Thanksgiving just a few weeks away, you’ll want to be sure you gobble up these chocolate turkeys for your holiday gathering….because they won’t be here for long!


Well, it’s that time again. Halloween has officially ended and it’s time to move on to the next holiday.…Thanksgiving! More so every year, I feel this holiday gets skipped over. I swear Christmas items are placed on store’s shelves leaving Thanksgiving with no fighting chance.

With all that in mind, I decided to take a walk back in the factory to check out our renowned Chocolate TurkeysFor those of you who have not taken our factory tour, I will do my very best to describe the process of making chocolate turkeys which is similar to many of our signature seasonal figures.

First, we hand fill the turkey moulds with our delicious chocolate.

Next, we assemble them on our Magnetic Tumbler (this is what makes them hollow on the inside!)

Once they are dry, we have someone “pop” each chocolate turkey out of their mould (no machine necessary here!)


Then we line them up like turkey soldiers so they can be transferred to packaging


Lastly, they are wrapped up with a festive bow and are ready to eat!

Luckily, we make these cute little birds in milk and dark chocolate so take your pick. They are great for place settings or if you really want to get creative you can turn them into an entire thanksgiving centerpiece scene! There goes my imagination, but seriously the possibilities are endless!

So please, I beg you, don’t forget about Thanksgiving!! It is an extremely important holiday of friends, family, food and giving thanks. Gobbling up our chocolate turkeys is just an added bonus! 


I feel I need to say up front that just going on first impressions, the two subjects of todays blog do not appear to be directly related but they are. I promise.

Earlier this week, I received a copy of Hobby Farm Home magazine in the mail. It’s a nice looking magazine, glossy cover with pretty imagery and inviting story headlines. Felt a bit like a Good Housekeeping or Family Circle with features about food and crafting. It’s descriptor says “True Country Living”. But I wasn’t expecting it so it took a moment to figure out why I had received this nice magazine. 

As I flipped through the pages, I came across a great write up and photo of our chocolate placesetting and centerpiece turkeys. They also mentioned our other autumn chocolates. What a treat! I’ve mentioned it before and I’ll say it again, I love when I see our chocolates in print. This was no exception! If you see Hobby Farm Home magazine in your bookstore, give it a read. It’s very nice.

Now, as I was doing just that, I came across a recipe. Well, I came across a number of them as there is quite a selection of delicious sounding recipes but this one caught my attention – Fall Harvest Cake. It read like a well developed Spice Cake and I decided I was going to attempt it. So, after baking it last night, I brought it into work and my co-workers said it tasted great. If only I’d had chocolate chips on hand, I would have definitely thrown them in. I think a little unsweetened cocoa added to the mix might give it yet another layer of fun.

At any rate, I want to share the recipe here, which I certainly hope they don’t mind. They have credited with the recipe so in an attempt to give credit where credit is due, thank you Hobby Farm Home and!

Fall Harvest Cake
1 ½  cups sugar
½  cup packed brown sugar
2 teaspoons ground cinnamon
2 teaspoons baking soda
½  teaspoon salt
¼  teaspoon nutmeg
¼  teaspoon ground ginger
1 cup oil
1 teaspoon vanilla extract
4 eggs
2 cups all-purpose flour
16 ozs. pumpkin
1 apple, cored, peeled, and chopped
½  cup chopped pecans

Preheat oven to350°.  In a large bowl, mix the first 10 ingredients together; add flour, 1/2 cup at a time. Blend in pumpkin; fold in apple and pecans. Transfer batter to a greased and floured Bundt pan. Bake for 60-70 minutes. Cool 20 minutes in the pan; remove and complete cooling on wire rack.

They also included a recipe for frosting but it was so good plain, I left it out here. Incidentally, I didn’t have a bundt pan so I use a rectangular pan and even had enough extra batter to make a small loaf as well. Enjoy!
